Moist and Sweet Pan-Fried Sweet Potatoes

Sweet Potato Recipe
Sweet potatoes are delicious even when simply deep-fried, but by adding one extra step before pan-frying, you can draw out their natural sweetness even more.
Crispy on the outside and rich, soft, and sweet on the inside.

Ingredients
(Makes an easy batch)
・2 sweet potatoes
・Oil, as needed
・Salt, to taste
・Sugar (optional, if the sweetness of the sweet potatoes is not sufficient)

Method
①Wash the sweet potatoes thoroughly and place them, still wet, on a baking tray lined with aluminum foil. Bake in a preheated oven at 180–200°C (355–390°F) for about 60 minutes. About halfway through, turn them over once to ensure even cooking.
②Once the sweet potatoes are fully cooked, remove them from the oven and let them cool until just warm. Cut into bite-sized, irregular pieces.

③Pour oil into a frying pan to a depth of about 5 mm and heat to approximately 170°C (340°F). Add the sweet potatoes from ② and pan-fry, rolling them gently until the entire surface becomes crisp.
④While still hot, sprinkle with salt, and add a small amount of sugar if desired. Serve immediately.

Because they are pre-cooked, they can be fried with a smaller amount of oil, which is another welcome benefit.
